What’s a bagel without cream cheese? I used Mark Bittman’s How to Cook Everything to make a farmer’s style cheese using dried milk. I added a little olive oil and salt at the end to make a tasty cheesy spread for the bagels that wasn’t quite cream cheese but that worked well.
